Today was Henry's and my first time going to the grocery store without my husband. Derek started work today and my plan is to make dinners for us at least Monday through Thursday most weeks. Our apartment is still not in order yet (the move has been incredibly stressful and Henry makes unpacking and organizing so much more challenging), but we're getting there slowly but surely, and I'm looking forward to hopefully cooking consistently for the first time as a family.
I am not a cook. I usually bake and enjoy making and decorating desserts, but even that has been non-existent since Henry got here. The reason I say that I am not a cook, is I want you to know that what you will see me do can be done by anyone. Also, I am working within the bounds of having a picky husband, a clingy baby, and a vegetarian household. So, here it goes.
My plan is to keep an account of my weekly meals on here. I will list my calendar of meals as well as give recipes for those meals. To prepare for our first grocery visit, I decided what meals I was going to make for us each day of this week. From there I complied my grocery list (I use the "Out of Milk" shopping list app) and today I did my shopping.
My meal calendar for this week is as follows:
Monday: Bean and Cheese Enchiladas with Spanish Rice
Tuesday: Copycat Panera Strawberry Poppyseed Salad and Copycat Nordstrom's Tomato Basil Soup
Wednesday: Surprise Disneyland Cafe Orleans Birthday Dinner for my husband
Thursday: Bean Tacos
